I used to be somewhat the same way (although I used a grinder that goes on the big KitchenAid mixer). I no longer do that merely because I take cut style down on footing beef/turkey. It also is many times much cheaper to buy full chuck steaks and grind them your cocky over buying pre ground beef, specially if y'all desire something less fatty than fourscore/20. I also cut my own beef for stew for the same reason.
